Kitchen Success Story: Oriental Chicken Casserole Edition

So, this is the third time I've blogged about a successful cooking attempt resulting from my Baldwin Christian School cookbook.  Let's be honest, they should have named this cookbook Baldwin Christian School's Magical Cookbook for the Undomesticated Lady.   Because it is magical.  And I don't even believe in magic. 

Enough said.  Here's the recipe!

Oriental Chicken Casserole
Ingredients:
1 T. butter
1/2 c. celery, chopped
2 T. onion, chopped (or dry)
10.5 oz. can cream of mushroom soup
2/3 c. chicken broth
1 1/2 c. cooked chicken, diced
2 T. soy sauce
1 1/2 c. cooked rice
3/4 c. chow mein noodles
1/2 c. cashews

Instructions:
In medium skillet, saute celery and onion in butter until softened.  Stir in soup and broth, then chicken and soy sauce.  Simmer over low heat for 5 minutes.  Stir in rice.  Pour into 1 1/2 quart casserole and bake at 350F for 20 minutes, until liquid bubbles.  Sprinkle noodles and nuts on top and return to oven for 5 minutes.  Serves 4-5 people.
